- 2–3 ripe peaches, halved
- Olive oil
- 1 ball fresh burrata
- Handful rocket or baby greens
- 4–6 slices prosciutto
- Balsamic glaze
- Basil leaves
Method:
- Brush peaches with oil and grill cut-side down for 2–3 minutes.
- Arrange greens on a platter.
- Tear over burrata and prosciutto.
- Add grilled peaches and top with basil + balsamic drizzle.

3. Crispy Halloumi Tacos with Pineapple Salsa

- 1 block halloumi, sliced

- 1 can condensed milk

- 100g melted butter
Icing:
- 2 cups icing sugar
- Lemon juice
- 1 tbsp melted butter
- Extra coconut
Method:
- Mix all base ingredients and press into a lined tray.
- Mix icing ingredients until smooth and spread over base.
- Sprinkle with coconut and chill for 2 hours.
